International Delight Made MY Way: Mocha cupcakes with Caramel Macchiato Glaze #IcedDelight

I'm a big fan of coffee, but I only like hot coffee when it's cold outside. When it starts to get warm I switch to iced coffee. Usually I go for a Starbucks frappaccino but we all know how quickly that can break the bank. You also know, especially if you live in NC how hot it has already started to get so you'll be needing those iced coffees more than you would think.

Thanks to International Delight Iced Coffee my frugal prayers have been answered. I can still have a nice glass of cold coffee each and every morning without going to live at the poor house (something my mom used to say).

I normally pick up my ID Iced Coffee (#IcedDelight) at Walmart but did you know that you can get a twin pack of the mocha flavor at Sam's Club? And to make the deal even sweeter, it's about $.40 a serving! You can't beat that. Even though I'm the only one to drink it in my house, you can see from the picture above that I will have plenty of time. It stays fresh for over a month!! Not that I need a month to drink it all!
So off I went with the fam to my favorite (and only) Sam's club in town. My mission: purchase International Delight Iced Coffee Mocha twin pack and some International Delight Creamer and make a yummy creation to share with my friends and family. The twin packs were easy to find but I couldn't find the creamer that I really wanted to use. There wasn't much of a creamer selection. I bought the twin pack of mocha, of course and then headed home to get started on my yummy treat: Mocha Cupcakes with Caramel Macchiato Glaze!

Now I know you want the recipe so here it is. I like to think of it as my version of a Sandra Lee type of recipe. In case you don't know Sandra Lee makes semi homemade meals and desserts.

The mocha cupcakes are super simple. Just get a box mix of milk chocolate cake and follow the directions substituting the water for International Delight Iced Coffee. (You can also substitute the oil for applesauce to make the cupcakes even more moist. However, I stuck with oil because I figured the Iced Coffee would make it creamy enough.

 Just mix everything together and stick in the oven for the suggested time on your box mix. They'll come out looking super yummy and moist like the ones below. You don't even have to add the glaze!


Next is the hard part. It's the Caramel Macchiato glaze. This one is inspired by my grandmother's secret caramel icing recipe (Shh...don't tell I'm sharing)

Ingredients:
                 2 sticks of butter
                 1 cup of brown sugar
                 1/4 cup of milk (I used 2%)
                 Caramel Macchiato creamer to taste preference (I used about 1/4 a cup)
                 1-2 cups powdered sugar to get the sweetness and consistency you like (I used about 1 1/2
                 cups)

 First melt your butter on medium heat. Bring to a boil. Be sure to keep a close eye on this and don't let it all boil away or burn. Add in the brown sugar and bring to a boil again. Now it's super important to keep stirring at this point as the sugar melts. You also may have to occasionally adjust the heating on your burner. I didn't want it to boil too quickly and I didn't want the sugar to burn. Keep a close eye on this!! Once sugar and butter are blended well slowly add in your milk. Again continue to stir and slowly bring to a boil.
 I then removed the mixture from the heat and added in my caramel macchiato, tasting as I went...hehehe. Wait until your caramel sauce cools then transfer to a mixing bowl. Add in your sugar a cup at a time and mix with a hand mixer (sorry no picture. I couldn't master using the hand mixer and taking a picture at the same time...LOL looks like a kitchen aid might need to be in my future)! Finally take your glaze and spoon it over your mocha cupcakes. I did one layer, let it cool and then a second layer. If you want to make the glaze set quickly (it was so hot yesterday that this was a must), place it in the freezer for a few minutes.
