Keeping it Cool with summer treats! #FMcoolwhipmoms

I love hot weather and one of my most favorite things to do during hot weather is cook! I know some people really like to get creative during the cold months since they are stuck inside but my fun treats come during the summer. One of my all time favorites is a dessert that is quick, easy and super yum! It's one that is perfect when your family screams, "We want dessert" and you have nothing in your house!

That's why you need an "everyday" dessert. What do I consider an everyday dessert? Something that doesn't take me all day to make! LOL Also something that I can quickly put together. Something that can be eaten one day, stored, and then enjoyed again the next day.

I'm one of those moms who likes to make treats with simple ingredients and ones that are unique. I'm not really a "from scratch" baker so I like recipes that include pre-made ingredients but still make you look like a master chef.  Any busy mom knows that kids have very little patience so the quicker you can feed them the happier they are. Sometimes it only takes a quick ingredient like COOL WHIP Whipped Topping to really make your dessert special.

Introducing: Molten Chocolate Surprises. It's one of those warm, gooey treats that you make a little bit cooler with the help of COOL WHIP Whipped Topping!

Ingredients:
  • 4 squares BAKER's Semi-Sweet Baking Chocolate
  • 1/2 cup (1 stick) butter
  • 2 whole eggs
  • 2 egg yolks
  • 1 cup powdered sugar
  • 1/3 cup flour
  • 12 CHIPS AHOY! Real Chocolate Chip Cookies
  • 1/2 cup thawed COOL WHIP Whipped Topping
Directions:
 Preheat oven to 425 degrees. Microwave chocolate and butter in large microwaveable bowl on HIGH for 2 minutes or until butter is melted. Stir with wire whisk until chocolate is completely melted and mixture is well blended.
Beat whole eggs, egg yolks, sugar and flour with wire whisk until well blended. Gradually add to chocolate mixture, beating constantly until well blended.
Line 12 medium muffin cups with paper liners; spray with cooking spray (I used the one with flour). Place 1 cookie, upside down, on bottom of each cup:
cover evenly with batter.
Bake 8 minutes or until cakes are firm around edges but still soft in centers. Let stand 1 minute.

Carefully remove cakes from muffin pan. Invert onto dessert dishes; remove paper liners. Serve with COOL WHIP Whipped Topping.
