I love trying out new meals even though I don't LOVE to cook. So when my local MOPS group asked me to bring a breakfast casserole for to our next bi-weekly meeting I got a little nervous. I knew I had a few weeks to get ready so I just had to find the right recipe. And I don't know about other people but if it's a new recipe I like to try it out at my house before I share it with others. HEHEHE! That's why it was perfect when I was picked to try out the new Hillshire Farm Gourmet Creations I knew I just had to find the perfect recipe that I could add the yummy sausage in.
In case you haven't heard about Hillshire Farm Gourmet Creations then let me fill you in. They are the newest edition to the great line of sausages that Hillshire Farm already produces. There are four different flavor creations to choose from: Beef & Bacon with Monterey Jack Cheese, Chicken Apple with Gouda
Cheese, Sweet Italian Style with Pepper & Mozzarella Cheese and Beef
& Jalapeno with Monterey Jack Cheese. They are all pre-cooked making them easy to add to any dish or to eat alone! You can check out my This Moment story to see how long it took me to find these yummy sausages.
So I called my mom and asked for a recipe. She had just found a new one for a Breakfast Fajita Casserole that used potatoes so I thought it would be perfect. Orginally, the recipe didn't call for any meat but I thought it would be quite simple to add in the sausage. Now to find it. I went to three different Walmart stores before I found the Gourmet Creations. Third time was the charm! I was excited to see there was even a "use me now" coupon attached to the package! That's a real appeal for me when I'm trying something new. I chose to add the Beef and Bacon with Monterey Jack Chesse because 1) bacon is a breakfast meat and 2) Monterey Jack Cheese goes great in Mexican inspired meals! Check out my recipe below (now it doesn't look that pretty but it tastes great)!:
2 tsp. Olive Oil
2 tsp butter
2 Green Onions chopped
1/2 red bell pepper cut in slivers (I used green)
1lb Yukon Potatoes- thinly sliced
1 clove of garlic chopped
3 tbsp of Heavy cream
pinch of oregano
pinch of thyme
1/4 tsp salt
pepper to taste
1/4 cup of Guyere cheese (I used cheddar)
2 Beef and Bacon links chopped into small pieces
Heat oven to 400 degrees.
Put oil and butter in pan over medium heat. Once butter is melted add, onions, peppers and garlic. Saute for 3 minutes. Add in potatoes. Cover and cook for 10-12 minutes or until potatoes are tender.
Meanwhile, mix eggs, cream, spices and sausage in a separate bowl. Once potato mixture is done, pour into casserole dish. Next, pour egg mixture over the top. Finally top with cheese. It says 1/4 a cup but I covered it with cheese and the next time I think I will also add cheese into the egg mixture. You may also want to tilt casserole dish from side to side to let egg mixture seep in between potato layers. Bake in over for 10-12 minutes or until egg mixture is solid.
Take out of oven. Allow it to sit for a few minutes and then serve with fresh fruit.
