Slim Me Down Week 12!

Jennifer from Jenerally Speaking and I have teamed up to start a 'Slim Me Down' WEEKLY Challenge. Each week we'll be weighing in, talking about our successes, struggles and goals. We'll be posting new recipes to try, websites to check out and support each other through the journey.

Alright, I have great news in my life. I finally got the kids signed up for daycare for two to three times a week meaning that I now have time to exercise. Jennifer has been telling me about how awesome Zumba is so I can't wait to sign up for some classes! I also went shopping this week to buy some healthy choices in food and we're working on eating healthy as a family. Lunch is my favorite meal so I decided to look up some more lunch recipes. 
I love, yes LOVE tuna and when I was reading my Jet magazine this week I found this awesome new recipe for Tuna Olive Salad Sandwiches. Perfect for lunch! I tried to find this recipe online but I couldn't find it so bare with my typing. 
Tuna Olive Salad Sandwiches
(2) 6oz cans of tuna packed in water, drained
1/4 cup mayonnaise or salad dressing 
2 tablespoons chopped read onion or sweet onion
10 pimento-stuffed green olives, coarsely chopped
5 ripe black olives, coarsely chopped
2 teaspoons fresh lemon juice
8 slices whole- grain bread
4 slices tomatoes

1. Place the drained tuna in a medium bowl and flake with fork.
2. Add the mayonnaise, onion, olives and lemon juice.
stir together gently.
3. To assemble sandwiches, spread 1/4 of the tuna mixture on a slice of bread. Repeat with three more slices. 
4. Arrange tomato slices and lettuce on each and top with remaining slices of bread. 
5. Cut in half to serve. 

Yields 4 servings
